The Perfect Turkey
The turkey is the centerpiece of your meal, and the one dish that every great host strives to perfect. Luckily for you, we’ve compiled a few of the best tips for acing the Thanksgiving bird.
- Choose wisely when selecting your turkey. A fresh turkey may not necessarily be better than frozen since frozen turkeys are snap-frozen just after butchering.
- Brining is the best way to keep your turkey moist and flavorful. A typical brining solution contains water, salt, sugar and a variety of spices and aromatics.
- Basting is unhelpful (despite what your Grandmother tells you). Basting requires more oven opening, which can result in temperature fluctuations. This is a sure-fire way to dry out the bird!
Cranberry Sauce (Spiced with Orange)
This is a new take on an old favorite. The perfect amount of winter spice is cooked into traditional cranberry sauce, and then finished with allspice and freshly squeezed orange juice. This is a great dish because it can be made one to two days ahead of time, giving you more hours in your Thursday!
- Gather allspice a 4-inch square of cheesecloth and tie into a sachet. In a medium pot over medium heat, combine sugar, orange juice, and 1/4 cup water. Add sachet and cook, stirring occasionally, until sugar melts and liquid begins to bubble, about 5 minutes. Remove from heat and let steep for 10 minutes.
- Return pot to stove over medium-high heat and add cranberries and zest. Cook until cranberries just begin to pop, about 7 minutes. Discard sachet.
Apricot-Wild Rice Stuffing
This dish is a sweet and savory surprise! Your guests have had the same stuffing recipe for years. Rather than sticking to tradition, give it your own spin with fresh apricots and wild rice.
- Preheat oven to 375 degrees F. Butter a 3-quart baking dish.
- Cook rice according to package directions. Toast bread on a baking sheet until dry, 12 to 14 minutes.
- Meanwhile, melt butter in a large pot over medium heat. Add onion, celery, and garlic and cook, stirring occasionally, until softened 8 to 10 minutes. Add apricots, parsley, sage, and thyme and cook, stirring, until fragrant, 1 to 2 minutes. Season with salt and pepper.
- Stir in rice, bread, and walnuts. Transfer to prepared baking dish. Bake until golden, 35 to 40 minutes.
